Making lemon cookies from cake mix is easy! First, a box of lemon cake mix is mixed with eggs, oil, and chocolate chips. The mixture is rolled into balls and placed onto a baking sheet. The cookies are baked for 17 minutes at 350 degrees. See below for a detailed ingredient list and instructions.

Store cake mix cookies at room temperature in an airtight container for 3-5 days. Fully baked cake mix cookies can also be frozen for up to 3 months.

Lemon White Chocolate Cake Mix Cookies are a delightful treat made with four simple ingredients. They are citrusy, sweet, and so easy to make!

INGREDIENTS

1 box lemon cake mix
2 large eggs
1/4 cup vegetable oil
1/2 cup white chocolate chips

INSTRUCTIONS

1. Preheat your oven to 350 degrees F. Line a baking sheet with parchment paper.
2. In a large bowl, stir together the cake mix, vegetable oil, and eggs. Stir in the white chocolate chips.
3. Portion the cookies into 1 1/2-inch balls. (Roll the cookie dough into balls with your hands.)  Press additional chocolate chips into the tops of the cookies, if desired.
4. Bake 2 inches apart on the prepared baking sheet for 17 minutes. Remove from the oven, let the cookies sit on the baking sheet for 2 minutes, and then transfer the cookies to a cooling rack.

NOTES

You will need to bake these cookies in several batches to ensure they are spaced out enough.

I suggest using a cookie scoop so you have evenly-sized cookies!
