When I was a little girl, my Dad loved to eat corned beef hash from a can. I was the only one out of myself and my three sisters that liked it, too.

Leftover Corned Beef Hash
This homemade Corned Beef Hash is made with your leftover corned beef and red potatoes. It's made in under 20 minutes and is way better than the canned stuff!
prep time: cook time: total time: 17 MIN
INGREDIENTS
2 tablespoons olive oil
1 tablespoon butter
2 cups cooked corned beef, finely chopped
2 cups cooked red potatoes, diced
1/2 cup onion, diced, optional
kosher salt and black pepper, to taste
INSTRUCTIONS
1. Heat the butter and oil in a large skillet over medium-high heat. If using onion, saute the onion in the oil and butter for 3 minutes, stirring frequently, then add the corned beef and potatoes to the skillet. If not using onions, add the corned beef and potatoes to the butter and oil. Season with salt and pepper.
2. Firmly press down on the potatoes and corned beef with the back of your spatula. Do not stir. Let the corned beef and potatoes cook for 7 minutes.
3. Flip one section of the potatoes and corned beef to see if it is browning nicely. If it's browned well, flip the remaining sections of the skillet, press firmly with the back of your spatula, and cook for an additional 5 minutes or until browned to your liking. Serve immediately.
