A hot cheese dip is the quintessential party appetizer. Just about everyone likes dipping chips in glorious melty cheese, wouldn't you agree?.

When it comes to cheese dips, there are like a bajillion different options. Some use white cheese, some use orange cheese, some use mozzarella for extra cheese pull goodness. Some cheese dips have sausage, some have tomatoes, and some have green chilies. The options could go on forever!

This cheese dip uses the king of smooth meltiness...Velveeta.

Now, I know some people don't love Velveeta and would prefer a "real" cheese in their cheese dip. I get that.

However, there are some people out there (like me) who don't mind getting down with some processed cheese every now and then. This Velveeta dip is a crowd-pleaser for sure and I'm willing to bet you won't want to stop dipping!

With just four ingredients, this Velveeta Rotel Dip couldn't be easier to make! It's a crowd-pleasing appetizer for game days and get-togethers!

prep time: cook time: total time: 15 MIN

INGREDIENTS

1 lb. ground beef
16 ounces Velveeta cheese, cubed
1 (10 ounce) can Rotel tomatoes, undrained
8 ounces cream cheese
green onions, chopped (optional)

INSTRUCTIONS

1. Brown the ground beef in a large skillet over medium-high heat. Drain the grease.

2. Add the cubed Velveeta, cream cheese, and tomatoes to the skillet and cook until the cheese is melted, stirring often.

3. Serve immediately or transfer to a crockpot to keep warm.

NOTES

Alternately, this dip can be prepared in the crock pot. Brown the beef, drain, and it, along with the cheeses and tomatoes, to the crock pot. Cook on low, stirring occasionally until the cheese is completely melted.

This dip thickens up considerably as it cools. A small dip warmer or crockpot is necessary if the dip will not be eaten immediately.
