If you've been a reader of this blog for any length of time, you know that I love sausage, peppers, and onions. I like to use that glorious trifecta of ingredients to inspire all kinds of different recipes.
This recipe uses my favorite bulk Italian sausage stuffed inside of tender biscuits cooked in a muffin tin. It's genius, I tell ya! I like to mix up the peppers with a little green and a little red for a pop of color. And don't forget the mozzarella! It's like the frosting on the sausage muffin.

HOW TO MAKE SAUSAGE BISCUIT CUPS
Sausage biscuit cups are so fun to make! First, you line the cups of your muffin tin with refrigerated biscuit dough. Each cup is filled with browned Italian sausage and sauteed peppers and onions. Some shredded mozzarella is sprinkled over the top and the cups are baked until the cheese is melted and the biscuits are golden. I like to use Pillsbury Grands biscuits for this recipe. You can use smaller biscuits, but I prefer extra large biscuity goodness. You can use any variety of Grands biscuits. I've used Southern Style, Buttermilk, and Original Flaky Layers with success!WHAT IS BULK ITALIAN SAUSAGE?
Bulk Italian sausage is pork sausage that is ground and not in a casing. You can buy bulk Italian sausage in a roll form in your refrigerator section of the grocery store near the bacon or packaged in a tray located in the meat department. You can even make your own Italian sausage at home!WHAT KIND OF MUFFIN PAN SHOULD I USE TO MAKE BISCUIT CUPS?
You should use a standard size 12-cup muffin pan for this recipe. If desired, you can use a jumbo muffin pan and fewer biscuits. You can use either a metal muffin tin or a silicone muffin pan. Sausage, Pepper, and Onion Biscuit Cups
Sausage, Pepper, and Onion Biscuit Cups are made in your muffin tin by lining the cups with biscuit dough and filling them with Italian sausage, peppers, and onions. Your family will devour them!

INGREDIENTS
1 lb bulk Italian sausage
1 small bell pepper, diced
1 small onion, diced
2 cloves garlic, minced
1/2 tsp salt
1/4 tsp black pepper
3 oz mozzarella cheese, shredded
2 (16.3-ounce) tubes refrigerated Grands biscuit dough
INSTRUCTIONS
1. Preheat your oven to 375 degrees F.
2. In a large skillet over medium-high heat, cook the sausage until browned.
3. Drain off the grease from the sausage and add the peppers, onions, garlic, salt, and pepper to the skillet. Cook until the veggies are tender, about 5 minutes, stirring occasionally.
4. Lighty spray a 12-cup muffin tin with olive oil spray. Flatten each biscuit and press into the bottom and up the sides of each cup. (You will have 4 biscuits leftover.)
5. Evenly distribute the sausage filling into each biscuit cup, pressing the filling into the cup and piling on top. Sprinkle each cup with shredded mozzarella cheese.
6. Bake the cups in the preheated oven for 20-30 minutes, until the biscuits in the middle of the pan are cooked through. (See Notes below.) Bake the remaining biscuits alongside the biscuit cups if desired, or save to bake at a later time.
NOTES
Cook time will vary depending on the type of pan you use. Silicone muffin pans may need to cook on the longer side, while metal pans will require less time. Check the muffins that are in the middle of the pan for doneness at 20 minutes and continue cooking for up to 30 minutes until the biscuits are cooked through.
If desired, you can use small non-Grand muffins or, alternately, jumbo muffin tins. Cooking time will vary. See the above note for testing doneness.

DeleteI made this and ruined it. The quantities are a bit daunting but I'm the self-proclaimed queen of cutting down recipes. I cook for one. I had four left over biscuits, some peppers and onion and two Italian sausage links. I followed the instructions with the reduced quantities. It was super simple and smelled so good. Who doesn't love sausage, peppers and onions? No one that I wanna know. I popped them in the oven and promptly got distracted by a shiny object. I burnt my biscuits beyond recognition. I ate the innards anyway because it was dinner and late and I wasn't starting over. It was delicious and I think had I not destroyed the biscuits and had it as intended I would have thoroughly enjoyed it. I'll try it again a some point and I'll stare at the oven to make sure I don't ruin it again. Thanks so much for the time and effort you put into developing the recipe and sharing it.
