Yes! This salad can be made a day in advance. Store covered in the refrigerator until ready to serve.

Grilled Bell Pepper, Tomato, and Mozzarella Salad


This Grilled Bell Pepper, Tomato, and Mozzarella Salad is bursting with summer flavors! It's the perfect fresh side dish to serve at a cookout.

INGREDIENTS


3 small red bell peppers
4 tablespoons olive oil,split
1 tablespoon balsamic vinegar
1 clove garlic, minced
1 teaspoon each fresh rosemary, basil, and oregano, minced
1/4 teaspoon kosher salt
1/8 teaspoon fresh ground black pepper
1 cup red onion, thinly sliced
1 cup cherry tomatoes, halved
8 ounces fresh mozzarella cheese, cubed
2 tablespoons parmesan cheese, shaved


INSTRUCTIONS


1. Heat your grill to medium-high heat.

2. Core the peppers and cut each pepper into three pieces. Toss the peppers with 1 tablespoon of olive oil and season with salt and pepper. Grill the peppers until they begin to blister and char. Remove the peppers from the grill and cool to room temperature.

3. Meanwhile, in a small bowl, whisk together the remaining 3 tablespoons of olive oil, balsamic vinegar, oregano, rosemary, basil, garlic, salt, and pepper to make the dressing.

4. Slice the cooled peppers into thin strips and place them into a large bowl. Add the red onion, tomatoes, mozzarella, and dressing to the bowl. Toss to combine. Top with the parmesan cheese and serve.

  1. This is my absolute favorite garden recipe this year, it has so much flavor! I still have plenty of peppers, cherry tomatoes and fresh herbs, so I'm going to make more. I'm adding more peppers next time, as they got a bit lost.
