When summer is in full swing and temps are soaring, we like to turn to the grill to prepare lots of our meals.
I love to find creative ways to prepare light, fresh veggies during the summer months, and throwing some of my favorite veggies on the grill is an easy way to add tons of flavor to my garden goodies!
Zucchini is one of my favorite veggies to grill during summertime. It holds up beautifully on the grill and develops a subtly nutty flavor. The best part is that it's so EASY to make! You can have this simple side dish on your table in right around 10 minutes! Yes!
HOW TO MAKE GRILLED ZUCCHINI

Sure! Grilled zucchini can be prepared on an outdoor gas grill, on a charcoal grill, or indoors on a grill pan.HOW DO I KNOW IF I OVERCOOKED MY ZUCCHINI?
When zucchini is overcooked it turns from tender and pliable to mushy. You want to remove your zucchini from the grill before it gets to the mushy stage. Make sure you slice your zucchini in uniform slices so that it cooks evenly and be sure to not slice your zucchini too thin. Anything less than 1/2-inch thick will overcook before you get those beautiful grill marks!WHAT TO PUT ON GRILLED ZUCCHINI

Easy Grilled Zucchini
Grilled Zucchini is the perfect summer side dish because it's healthy, delicious, and super easy to prepare!
prep time: cook time: total time: 13 MIN
INGREDIENTS
2 zucchini, cut into 1/2-inch slices
2 tablespoons olive oil
1/2 teaspoon kosher salt
1/2 teaspoon garlic powder
1/4 teaspoon black pepper
INSTRUCTIONS
1. Preheat your grill to medium-high heat.
2. In a large bowl, toss the zucchini with the olive oil, salt, garlic powder, and pepper. Add additional seasoning if desired (see notes).
3. Arrange the zucchini on the grill in a single layer. Cover and grill for 3 minutes or until you see grill marks when flipped. Cover and cook for an additional 3-4 minutes or until tender, but not mushy.
NOTES
This basic grilled zucchini recipe is great served as is, but can also be dressed up with additional herbs. Try adding 1 teaspoon of dried Italian seasoning, dried basil, or dried oregano when seasoning your zucchini.
