Green beans are one of my very favorite vegetables. I started my kids on them when they were young so that they would hopefully love them, too.
First, they enjoyed a puree that I made for them from steamed beans. Then, they graduated from puree to whole string beans.
String beans are the best for toddlers, right? They love splitting open the bean and finding the little seeds inside. It totally makes green beans a fun food for them!
Roasted green beans came next, once they came to appreciate green beans in their string form.
Finally, they've moved on to appreciating the mother of all ways to prepare green beans...green bean casserole. My FAVORITE.
Today, I am sharing with you my green bean casserole recipe that I would literally eat every day if I could!
This green bean casserole is traditional in a lot of ways. There are oodles od fresh green beans. There's a creamy sauce. And cheese. Lots of cheese. Mega cheese.
And you can't forget the french fried onions that give green bean casserole that much needed textural crunch. Don't skip them!
What this green bean casserole doesn't have is 'shrooms. I adore mushrooms, but I've been making this green bean casserole recipe for Thanksgiving for years and we have a few family members who give mushrooms a big thumbs down. The mushrooms are subbed out with diced onions, which pair smashingly with the beans!
Another way that this recipe differs from a lot of green bean casserole recipes is that it doesn't use canned soup. Nope. Not this time.
What makes this recipe so special is that the green beans are smothered in a decadent sour cream mixture. Don't knock it 'til you try it, y'all!

Sour Cream Green Bean Casserole
Sour Cream Green Bean Casserole is a no mushroom, no canned soup version of the classic side dish that is made with fresh green beans, creamy sour cream, and sharp cheddar cheese. Don't forget the french fried onions on top!

INGREDIENTS
3 pounds fresh green beans, trimmed and steamed*
1/4 cup butter
1/2 cup onion, diced
1/4 cup flour
2 cups sour cream
2 teaspoons kosher salt
2 teaspoons sugar
2 cups sharp cheddar cheese, shredded
1 1/2 cups french fried onions
INSTRUCTIONS
1. Preheat your oven to 350 degrees F.
2. Melt the butter in a large skillet over medium-high heat. Add the onions to the butter and cook until translucent.
3. Stir the flour, salt, and sugar into the butter and onions. Mix in the sour cream.
4. In a large bowl, stir together the green beans and the sour cream mixture. Transfer the green beans to a 9 x 13 baking dish.
5. Top the green beans with the shredded cheddar cheese. Bake in the preheated oven for 30 minutes.
6. Remove the green beans from the oven and top with the french fried onions. Return to the oven and continue cooking for an additional 10 minutes.
NOTES
I use a countertop steamer to steam my green beans. You can also steam them in the microwave, on the stovetop with a steamer basket, or on the stovetop in a pan.
The french fried onions can be sprinkled over the entire top of the casserole or around the edges, as pictured.
This recipe can be halved to serve a smaller crowd. If cutting the recipe in half, downsize to a 2 - 2 1/2 quart baking dish.

I was looking for a different green bean casserole and this was great! Left out the fried onions and half the salt and it was delicious! I will be making it again. Thank you for sharing!
