A few weeks ago I saw bags of small bell peppers on sale buy one, get one free. When I see fresh produce marked down like that, I'm quick to grab it up and these peppers were no exception.
I had absolutely no idea what I was going to actually do with all of those peppers, but I knew I'd figure it out later. Momma couldn't pass up such a sweet deal!
So I got home and decided I was going to get to work cleaning all of the peppers and chopping them up so that they would be easy to use throughout the week. I ate them in salads, I ate them with ranch dip, and I ate them right out of the fridge with nothing on them.
After eating peppers, peppers, and peppers for a few days, I still had a lot of peppers.
That's when I decided that I was going to get creative with those peppers. I was surveying my fridge and saw a half-empty jar of marinara sauce. Then, I spotted the mozzarella cheese. Then, I remembered the turkey pepperoni that was tucked away in the deli drawer.
It all came together and that's when this bell pepper pizza recipe was born!
Let me tell you, these babies are little bites of deliciousness. I am a BIG pizza fan and I like to pizza-fy all the things. I don't know why it didn't dawn on me to make something like this before!
The bell peppers were cooked just perfectly, tender, but still firm enough to hold the toppings. The cheese was melty, the turkey pepperoni gave them a little flair, and the fresh basil and crushed red pepper gave them the perfect amount of zip.
They have earned their spot in my permanent recipe rotation!

Bell Pepper Pizza Bites
With a bell pepper "crust" and lean turkey pepperoni on top, these Bell Pepper Pizza Bites are a delicious, healthy, low carb way to get your pizza fix!

INGREDIENTS
4 small bell peppers
salt and pepper
1/3 cup marinara sauce
1/2 cup mozzarella cheese, shredded
12 pieces turkey pepperoni, cut into quarters
parmesan cheese, grated (optional)
crushed red pepper (optional
fresh basil, chopped (optional)
INSTRUCTIONS
1. Preheat your oven to 350 degrees F. Lightly grease a baking sheet.
2. Cut the tops off of the peppers and remove the seeds and white membrane. Cut the peppers into quarters.
3. Arrange the peppers on the baking sheet and lightly season each one with salt and pepper. Top each one with sauce, cheese, and pepperoni.
4. Bake in the preheated oven for 15 minutes. Broil for 1-2 minutes to brown the cheese a little, if desired.
5. Top with a sprinkle of parmesan cheese, crushed red pepper, and fresh basil, if desired.
