Back in the day, making a baked potato was pretty straight forward...you baked a potato. You popped a potato in the oven and baked it until it was done. Boom, baked potato.
These days, there are quite a variety of ways you can make a baked potato, they're just not always baked. My new favorite way to make baked potatoes is in my air fryer. Yup, that little gadget can make absolutely delicious, perfectly cooked, fluffy on the inside and crispy on the outside baked potatoes.
If you don't have an air fryer, this just might be the recipe you need to buy one for. While it's more just a cooking method than a recipe, it's one you're going to want to make again and again!
A simple olive oil coating followed by some kosher salt is all you need to do to get these potatoes ready for their air frying.
The good thing about this recipe is that you can adjust the amount of salt to suit your tastes. You can even omit it if you'd like. But then it wouldn't be a salty skin baked potato, now would it?!
I like a generous amount of salt coating that irresistible crispy skin.
