I have to tell you, friends, the more I use my pressure cooker, the more I love it. My instant pot consistently yields perfectly cooked food that I want to make again and again. If you have an instant pot, I know you get it. My instant pot is legit my new favorite kitchen tool!
While your instant pot is great for cooking a wide variety of dishes, it's also ideal for making simple, basic recipes like this shredded chicken. Shredded chicken can be used in so many different recipes. Think chicken noodle soup, chicken ceasar salads, casseroles like my favorite Chicken Enchilada Casserole, weekly meal prep, and everything in between. It's one of those basic ingredients that you can prep, portion, and then throw in the freezer to use whenever you need it.

8 Quart Instant Pot Shredded Chicken
This 8 Quart Instant Pot Shredded Chicken recipe makes perfectly cooked, juicy, versatile shredded chicken breasts that can be used in tons of recipes!
prep time: cook time: 10total time: 15 MIN
INGREDIENTS
3-4 boneless skinless chicken breasts
1 1/2 cups chicken stock
1/2 teaspoon seasoned salt
1/2 teaspoon black pepper
INSTRUCTIONS
1. Add the chicken broth and chicken breasts to your 8 quart instant pot. Season the chicken with the seasoned salt and pepper.
2. Place the lid onto your instant pot and turn the steam valve to the sealing position.
3. Select the manual/pressure cook, high pressure setting and set the time to 10 minutes. After 10 seconds the display will say On. Once the instant pot is pressurized, the float valve will rise and the cook timer will begin counting down.
3. At the end of the 10 minutes, carefully turn the steam release valve to the venting position. When the float valve drops, open the instant pot and carefully transfer the chicken breasts to a cutting board and check the temperature of the chicken using a meat thermometer. The chicken should be cooked to 165 degrees F.
4. Using two forks, shred the chicken.

I have an 8 quart Instantpot but I cook for large groups using 5-6 pounds of boneless breasts (not frozen). Should this time get bumped up to 10-15 minutes?
