Caesar Tuna Stuffed Avocados make a delicious lunch or light dinner. The combination of tuna, avocado, and Caesar dressing is insanely good!
I've been toying with the idea of making stuffed avocados for quite some time now. I came across a stuffed avocado on Pinterest ages ago and it's been in the back of my mind ever since. I think the recipe I saw was a chicken salad stuffed avocado, but my brain was telling me tuna was the way to go. My brain made a very, very good choice, y'all. These tuna stuffed avocados were ah-mazing!
This recipe isn't just tuna and avocado, though. I'm sure you can see by the title that I gave my stuffed avocados a Caesar-style spin with some killer Caesar dressing, crushed croutons, and parmesan cheese. Again, such a good idea. I'm not trying to toot my own horn, but this combo of ingredients was on point...at least in my book! Don't be afraid to think outside the box! Tuna is great for more than just tuna sandwiches and Canned Tuna pasta!
This recipe uses some of the avocado flesh and a little bit of Caesar dressing in place of the usual mayo you find in tuna salad. I added a little bit of onion and celery as well because I like classic flavored tuna. You can use more or less of these and even add other mix-ins like bell pepper if that's what you like!
One ingredient that I suggest you absolutely not skip is the croutons. Yes, they are a garnish, but a very important garnish! See, the avocado and the tuna both have a pretty soft texture, even with the onion and celery mixed in. The croutons on top add just the perfect amount of crunch to these delish avocados. Trust me on this one. Don't skip them!
One thing to note is that this recipe is super simple to make. You might even be tempted to make these ahead of time in meal prep fashion. That is not suggested with these, though. If you know anything about avocados, you know that they easily turn brown if cut open and refrigerated even if for a short time like overnight.
Because of that, it's recommended to make these just before you serve them or, at the most, no longer than an hour after making if you want to pop them in the fridge for a bit to chill.
If you have bottled dressing on hand, naturally that will work just as well. I just really lurve my homemade dressing and it wouldn't be very nice of me not to share it with you.

INGREDIENTS
2 avocados
1 can tuna, drained
3 tablespoon Caesar salad dressing, split
2 tablespoons onion, minced
1 tablespoon celery, minced
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 cup croutons, crushed
2 teaspoons parmesan cheese
INSTRUCTIONS
1. Cut the avocados in half and remove the pits. using a spoon, scoop some of the flesh out of the avocados.
2. In a bowl, mix together the avocado you scooped out, 1 tablespoon of the Caesar dressing, and the remaining ingredients. Mix until well combined.
3. Fill the avocados with the tuna mixture. Drizzle with the remaining 2 tablespoons of Caesar dressing and top with the crushed croutons and parmesan cheese.
