Cherries are one of my most recent favorite indulgences. Snacking on a bowl of sweet, delicious cherries is a sweet treat I can feel good about eating. They are anti-inflammatory, full of antioxidants, and so so good.
Growing up, when I would think of cherries the only thing that would come to mind was bright red, drenched in sugar, jarred maraschino cherries. Preferably served in a shirley temple or on an ice cream sundae, naturally.
It wasn't until I was an adult that I discovered how amazing fresh cherries are. Maraschino cherries are now considered an afterthought for this girl! Fresh cherries are not only my favorite snacking fruit, but I also like to use cherries in breakfast recipes like overnight oats and in dessert recipes like these Almond Butter Blondies.
Yes, I know I skipped mentioning cherries in savory dishes. I know people do it and I'm sure it's fabulous, but I still haven't gotten there in my kitchen. Someday!
I've been experimenting lately with some better-for-you ingredients in my baking and I decided that I would try a recipe that I found on the back of some almond flour that one of my girlfriends gave me to try. I added some white chocolate to the recipe and threw in some beautiful fresh cherries I had in the fridge.
It was my first time trying a blondie recipe with no enriched white flour, no butter, and no sugar and I am happy to say that they turned out really great! If you've been wanting to try healthifying your brownies, this is a great recipe to start with.

White Chocolate Cherry Almond Butter Blondies
INGREDIENTS
1/2 cup melted unrefined virgin coconut oil
1/2 cup honey
1/2 cup almond butter
2 eggs
1 teaspoon vanilla
2 1/2 cups blanched almond flour
1 teaspoon baking soda
1/8 teaspoon salt
1 cup white chocolate chips
1 cup fresh cherries, pitted and quartered
INSTRUCTIONS
1. Preheat oven to 350 degrees.
2. In a large bowl, mix together the wet ingredients until completely combined. Stir in the almond flour, baking soda, and salt. Gently fold in the white chocolate chips and cherries.
3. Bake in an 8 x 8 greased glass baking dish for 30 minutes or until a toothpick inserted in the center comes out almost clean. Cool on a wire rack before cutting into 16 brownies.
