We are smack dab in the middle of summer break I couldn't be happier about it. Summer, in general, hasn't always been a favorite of mine until recently. There once was a time when I would dread the long summer days for one reason and one reason only. We didn't have a pool.
The humidity and Florida heat are unbearable without having a pool in the back yard to cool off every now and then when you're spending time outside. I may be spoiled, but this momma likes to beat the heat in a sparkling body of water! The good news is that two years ago we bought our forever home and I got my #1 non-negotiable...a big ol' swimming pool.
Now, my favorite thing is to embrace the sunshine, spending the afternoon with the family around the pool, sipping cool drinks, listening to good tunes, and grilling lots of yummy food.
I've been keeping things simple with our summer grilling menu this year because I want to spend as much time as I can with my toes in the water. I've been pairing our grilled proteins with fresh, light side dishes using fresh seasonal ingredients and making meals that are quick, easy, and delish.
For this recipe, I picked up some Smithfield All Natural Fresh Pork at Walmart and created a bright, bold, beautiful meal in less than a half an hour. You don't have to spend tons of time in the kitchen to get bold flavors and these Grilled Pork Chops with Avocado Salsa are proof!
The flavors of this dish are out-of-this-world good.

There are so many great ways you can prepare Smithfield All Natural Fresh Pork, but being the Mexican fanatic that I am, I couldn't resist putting a Tex-Mex twist on it this time around. I rubbed the boneless chops with my favorite earthy spices, then balanced the bold seasoning with a cool avocado salsa.
I'm telling you, this meal is like heaven on a plate! Just the smell of the pork chops cooking on the grill is intoxicating.
And can we talk for a minute about that beautiful salsa? The juicy tomatoes. that creamy avocado, the zest from the jalapenos, and lime juice...it's like summer in a bowl. All you have to do is mix it all up and refrigerate until the chops are done.
It seriously doesn't get any easier and gives you plenty of time to soak up that afternoon sun.
I've got one more tip for you: If you happen to have any leftovers (which I doubt you will!) they make an excellent taco filling or salad topper. Yum!

INGREDIENTS
1 package Smithfield All Natural Bone-in Pork Chops
1 tablespoon chili powder
1/2 teaspoon cumin
1/2 teaspoon onion powder
1/4 teaspoon kosher salt
2 avocados, pitted and diced
1 cup grape tomatoes, quartered
1/3 cup red onion, diced
1 cup loosely packed fresh cilantro, chopped
1 clove garlic, minced
1 jalapeño pepper, seeded and diced
1 lime, juiced
1 tablespoon olive oil
1/2 teaspoon kosher salt
INSTRUCTIONS
1. In a small bowl, combine the chili powder, cumin, onion powder, and salt. Rub the pork chops with the spice mixture, cover, and refrigerate for at least 15 minutes.
2. Meanwhile, make the Avocado Salsa. In a medium bowl, stir together the avocado, tomatoes, red onion, cilantro, garlic, jalapeno pepper, lime juice, olive oil, and salt.
3. Heat grill to medium-high heat. Oil the grate and place the pork chops onto the hot grill. Cover grill and cook for 4-5 minutes per side, until no longer pink in the center and between 145 and 160 degrees F.
4. Remove the Smithfield All Natural Bone-in Pork Chops from the grill and top with the Avocado Salsa.
