BLT Grilled Chicken Tacos are a fresh and summery twist on tacos made with classic BLT ingredients, dry-rubbed grilled chicken, and a cool avocado ranch drizzle.
I think I could eat tacos every day. Actually, scratch that. I absolutely, 100%, without a doubt could eat tacos every single day of my life. Gimme all da tacos.
Here's the thing, though: sometimes certain people in my family, *cough-my husband-cough*, quickly tire of going the Mexican route.
Crazy, right? I'll never understand it.
However, being the ever-accommodating wife that I am, I presented him with a compromise where he can get a break from my obsession with Mexican food and I can get tacos as often as I want. It turned out to be a win-win.
I get to keep my Mission Organics® Tortillas, but we'll mix things up and occasionally stuff them with non-Mexican fare. It's actually pretty brilliant!
First, we start with the tortillas, the backbone of the taco, so to speak.
You know when you go to the tortilla section and there are like a million and two different kinds of tortillas staring at you and you're thinking how can there be sooooo many choices?
Well, I recently started buying the (new to the market!) Mission Organics Tortillas for taco night and I am so in love with them.
Mission Organics Tortillas save me so much guesswork when it comes to which tortilla is the right choice for my family.
Let me break it down for you:

- They come in the perfect size packages for my family. Flour and Whole Wheat are a 6 count and the White Corn is an 8 count. Unless I'm throwing a massive fiesta, I really don't need a 100 count package of tortillas!
Naturally, they taste amazing and they totally held up to my super stuffing. My friends at Mission have really knocked it out of the park with these babies!
I decided to go with Mission Organics Flour Tortillas for this particular taco recipe....the BLT Grilled Chicken Taco. They were a perfect choice!
The BLT Grilled Chicken Taco has an American twist with the classic flavors you would find in a bacon, lettuce, and tomato sandwich. I sliced the tomatoes nice and thick, just like I would for a BLT, and added plenty of crisp lettuce and bacon.
Then there's the grilled chicken part of the BLT Chicken Taco. Chicken is not normally served on a BLT, obviously, but juicy dry-rubbed grilled chicken just screams summer to me and I couldn't resist adding it to the mix. I knew it would be the perfect addition to my BLT tacos and it was.
Plus, my husband is a carnivore. Sure, you've got the bacon, but he requires some substantial meatiness. The grilled chicken fit the bill.
Oh, and let's not forget that little sprinkling of feta. I'm a cheese girl. I've got to have some cheese on my tacos. The crumbled feta was a no-brainer and complimented my BLT flavors.
Finally, I drizzled my husband-approved tacos with a cool creamy homemade avocado ranch made with fresh avocado, Greek yogurt, lime juice, and a little seasoning.
Easy peasy and so incredibly tasty. It takes just a few extra minutes to make and adds so much bright, fresh flavor to the tacos.
I have tons of ideas for ways to celebrate taco night with my Mission Organics Tortillas. I'm thinking my honey would love a cheesesteak style taco or a smoked pulled pork barbecue taco. The possibilities are seriously endless!
I may even be able to pull off taco night several times a week with tacos like those in the mix! Suits me just fine.

BLT Grilled Chicken Tacos
INGREDIENTS
Chicken Tacos
6 Mission Organics Flour Tortillas
1 1/2 lb boneless, skinless chicken breast
1 teaspoon garlic powder
1/2 teaspoon smoked paprika
1/2 teaspoon kosher salt
1/4 teaspoon ground black pepper
1/8 teaspoon cumin
12 slices bacon, cooked
2 cups romaine lettuce, shredded
3 tomatoes, thick sliced
1/2 cup feta cheese, crumbled
Avocado Ranch
1/2 avocado, pitted and diced
1/2 cup plain Greek yogurt
1/2 lime, juiced
1 tablespoon milk
1 teaspoon fresh parsley, minced
1/4 teaspoon kosher salt
1/8 teaspoon dried dill
1/8 teaspoon onion powder
1/8 teaspoon garlic powder
INSTRUCTIONS
1. In a small bowl, combine the garlic powder, smoked paprika, kosher salt, and black pepper. Rub the seasoning mixture onto both sides of the boneless, skinless chicken breasts.
2. Grill the dry-rubbed chicken over medium-high heat for 5-6 minutes per side or until the internal temperature is 165 degrees.
3. Meanwhile, combine all of the ingredients for the avocado ranch in your food processor or blender. Process until smooth, stopping to scrape down the sides as necessary.
4. Remove the chicken from the grill and cut into thin strips. Top each tortilla with chicken, bacon, lettuce, tomato, and feta cheese. Drizzle with the avocado ranch.
