Are you a cauliflower lover? I so am. I love it raw dipped in Greek Yogurt Ranch. So many people pass on the raw cauliflower on the veggie tray and I just think they're crazy. That's alright, though. More for me! Ha! The crunch is fab and it's one of my very favorite raw veggies.
As much as I love raw cauliflower, roasted is the absolute best way to eat it. I'm a roasted vegetable lover all around. Seriously, give me roasted veggies three times a day and I'm good to go. Cauliflower develops such a delish nutty flavor when it's roasted!
And all of those crisp caramelized bits? Gah. So. Darn. Good.
This recipe isn't even much of a recipe, actually. I mean, it's just cauliflower, olive oil, salt and pepper. You can look at it as a cooking method, if you want. It really doesn't matter how you look at it as long as you make it and eaaaat it. This recipe is simple, classic, flavorful, and easy to prepare. It might just become your new favorite way to eat cauliflower!

- 1 large head cauliflower, cored and cut into florets
- 1/4 cup olive oil
- 1/2 tsp salt
- 1/4 tsp pepper
Instructions
- Preheat your oven to 425 degrees.
- In a large bowl, toss the cauliflower, olive oil, salt, and pepper. Place onto a foil-lined baking sheet in a single layer. Roast for 10 minutes, stir, then roast for an additional 10 minutes.
Notes
- You can add 1/2 tsp dried herbs to the mix if you want! Dried thyme or dried rosemary are great choices!
