I love to keep lots of fresh fruit in the house to eat with breakfast, lunch, and for snacks. I keep the kitchen stocked with healthy choices and resist the urge to buy lots of processed crap, it makes it easy to make a healthy choice.
The problem is, I always buy way too much. We eat plenty of what I buy, but there's always that last couple bananas, a handful of grapes, or the last standing peach that ripens just a little too much before we have a chance to eat it.
I've found a few solutions to my fruit over-buying (none of which involve buying less fruit, better to have too much than not enough!). Sometimes I'll throw all of the leftover fruit into a bowl and make a fruit salad. I also keep a baggie in the freezer for times when the kids will only eat half a banana or when they don't finish their pear. I just throw the pieces in to mix into ice cream or smoothies.
Sometimes, like in this recipe, I will use the fresh fruit in a smoothie! I had a peach that was on its way to being garbage, so I threw it in the blender with a few other simple, clean ingredients. It was creamy, dreamy and perfectly delicious!

Ingredients
- 1 cup unsweetened vanilla almond milk
- 1 large peach
- 1 cup ice
- 1/2 cup plain greek yogurt
- 1 Tbsp pure maple syrup
Instructions
- Place all of the ingredients into your blender and blend until smooth. Pour into two glasses and serve!
