I've been feeling the whole slider trend that's been going on.  I'm sure you've heard of them, right?  They're like miniature versions of burgers or sandwiches.  There's just something about itty bitty sandwiches that seems so appealing to me.

Do you know what I like very best about sliders though?  They are the perfect potion and perfect size for my 5-year old little lady's hands.  And pretty easy to portion for everyone in our family!  She eats one, I eat two, Daddy eats three.  With this recipe, there's some for everyone and a few leftover for my honey's lunch the next day. It's perfect!

I've made Hot Ham & Cheddar Sliders, which the family loved, but this time I decided to get a little more creative.  I took Ragú's classic Italian recipe for Skillet Chicken Mushroom Cacciatore and trasformed it into a sandwich -- a New Tra-Dish!  Why not, right?  Sounded like it would be a killer slider to me!



I added some red bell peppers to the original recipe and swapped out the canned mushrooms for fresh.  And I doubled them.  The mushrooms, that is.  I've been a little obsessed with mushrooms lately and it just felt like the right thing to do.  I threw on a little bit of cheese, as well.  Because every slider should have some delicious melty cheese, wouldn't you agree?

Chicken Cacciatore Sliders



Yeilds 8-10 sliders, depending on the size of your buns.

Ingredients
  • 2 Tbsps. olive oil
  • 2 lbs. boneless, skinless chicken breasts
  • 1 medium onion, sliced
  • 1 small red bell pepper, cut into 1/4 inch strips
  • 8 oz. fresh mushrooms, sliced
  • 4 oz. mozzarella cheese, shredded
  • 1 jar (1 lb. 8 oz.) Ragú® Old World Style® Traditional Sauce
  • slider buns, toasted

Instructions
  1. Heat olive oil in a large skillet over medium-high heat and cook chicken, onion, mushrooms and bell pepper for 10 minutes or until onion is tender and chicken is lightly browned on both sides.
  2. Stir in the Pasta Sauce. Bring to a boil over high heat. Reduce heat to low and simmer covered for 15 minutes or until chicken is thoroughly cooked.
  3. Remove the cooked chicken from the sauce and place on a cutting board.  Slice the chicken on a diagonal into 1/4 inch thick slices.  
  4. Place a few slices of chicken on the bottom half of a bun.  Top with a generous spoonful of the sauce and vegetables, and sprinkle with a tablespoon or so of the shredded cheese.  Place the open-faced sandwich on a cookie sheet and repeat to make 8-10 sliders.  Place the sliders under broiler open-faced for a few minutes until the cheese melts.  Place the top half of the bun on each slider and serve hot.
