I'm a lucky momma. My kid loves healthy food. Fruits, veggies, whole grains...she eats them all. Especially fruit. Man, that girl can pack in some fruit.
I occasionally go a little shop-happy and stock up with a few too many apples (or in this case mangoes) and I'm left with a bowl full of goods that's on the verge of going bad. The last thing I want to do is toss my fresh produce in the garbage, so I look for way to use it up.
That's how these popsicles were born. I had mangoes that were on their way out. We always have bananas. And with the weather being beautiful lately, the idea of a cool treat on a hot and sunny Florida afternoon sounded perfect. Easy, creamy, fresh and healthy. What could be better?
Ingredients
- 1 banana
- 2 mangoes
- ½ cup milk
Instructions
- Peel the banana and remove the pit and skin from the mango. Place all ingredients into your blender and blend until smooth. Pour into popsicle molds and insert sticks/handles. Freeze.
Notes
- If you're having trouble removing the popsicles from the molds, run under warm water for just a few seconds and they should come right out.
