This particular taco bar is extra special, though. My tacos are Guaca-Tacos. Guacamole is a key element in my taco bar!
Guacamole is easy to make, bring to a party, and serve with about anything. Did you know avocados are so popular at game day parties and festivities that people across the United States eat more than 1.3 billion pounds of avocados per year? If you made guacamole from all of the avocados sold for Big Game XLVII parties, you could fill the entire stadium 12 feet high.
Cray. Buuuuut, I get it! I love me some avocados.
Okay, now let's get back to setting up a party zone with a Game Day Taco Bar featuring my Guaca-Tacos made with Old El Paso™ and Avocados from Mexico!
What’s more festive during the game than a Taco Bar with perfectly seasoned ground beef, fresh toppings, crunchy taco shells, AND soft taco shells? And let's not forget that extra special layer of cool, creamy, classic guacamole.
For these tacos, I sandwiched that beautiful guac in between a soft taco shell and a hard taco shell. So much flavor and awesome texture and crunch from layering the shells. A double-decker taco. It doesn't get much better than that!
Once you have everything you need to make this ultimate taco bar, you'll just have to do a little prep, assemble your uber tasty guaca-tacos, and let your football friends dig in and top them with the fixins.
Of course, you could always doll up your guacamole with add-ins and more spiciness, but for this particular recipe, I like to keep it cool and classic. Nothing wrong with that! I like to keep it simple to let the avocados shine!

Ingredients
- 3 avocados
- 1 lime, juiced
- 1/2 tsp salt
- 1/4 tsp pepper
- 2 Tbsps. fresh cilantro, finely chopped
- 2 Old El Paso Hard & Soft Taco Dinner Kits
- 1 lb ground beef
- sharp cheddar cheese, shredded
- roma tomatoes, chopped
- red onion, diced
- shredded lettuce
- pickled jalapeno slices
- plain greek yogurt or sour cream
Instructions
- Make Guacamole: Cut the avocados in half, remove the pit, and scoop the flesh into a bowl. Add the lime juice, salt, pepper, and cilantro to the bowl and use a fork to mash it all together until it reaches your desired chunkiness.
- Make Tacos: Remove one package of the seasoning mix and reserve for another meal. Cook the taco shells and ground beef according to the package directions.
- Assemble: Spoon the meat mixture evenly into the hard shells. Spread a spoonful of guacamole onto each flour tortilla and wrap each one around a hard shell.
- Garnish: Serve with the cheese, tomatoes, onion, lettuce, jalapenos, greek yogurt, taco sauce, and any remaining guacamole.
