When the end of summer is on the horizon, I switch from laid-back-beach-going mom to organized-get-things-done mom. The fall brings a busier schedule for our family and, as the homemaker, it's my job to reset and refocus to ensure sure everyone settles into the new on-the-go routine comfortably.
Bed times will be earlier, seeing as we'll be starting our days bright and early when school starts, which means I've got to get dinner on the table earlier, too. That's where my organized side comes in to play!
A little effort goes a long way to take the stress out of dinner time with some simple meal planning on my part. I like to plan a week in advance and make a shopping list for everything I need, filling our weekly menu with recipes that are fresh, healthy, and easy to prepare.
This recipe comes together in right around 30 minutes, making it a family favorite on a busy weeknight. We adore tacos with all the fixings and this skillet meal puts a fun twist on our traditional taco night. It's like a loaded chicken taco made into a casserole! But, that's not the only reason why I love it. Not only is it chock full of fresh vegetables, lean chicken, and filling black beans, it cooks in just one pan. The last thing I want to be doing on a busy weeknight is a sink full of dishes. One-pan meals make this momma happy!
Any leftovers make an excellent packed lunch for my husband to take to work. I love to make recipes that will have just a little leftover to send with him for lunch. It saves money and keeps us from falling into the sandwich rut. Bonus!
