When I found this recipe it was one of those nights where I turned to the fridge and the pantry to help me decide what was going to be for dinner. We had chicken breasts, but we've done a LOT of grilling this summer, so I wanted to switch it up from the norm.
In addition to the chicken, I had some fresh spinach that I had no plans for and a bunch of spaghetti from when I stocked up on a recent buy one, get one sale. And of course, I always have cheese. I'm a cheeseaholic.
All of the ingredients that I had on hand screamed casserole to me, so I turned to good old Google and entered in chicken and spinach pasta casserole and voilĂ ! I found the perfect recipe. I tweaked it a bit to suit our tastes and the what I had in the pantry...a little more garlic, more tomato, and spaghetti for the pasta selection. It came out so good and we loved it!
This recipe was pretty similar to my Spinach & Artichoke Chicken Casserole that uses marinated artichoke hearts and egg noodles. Both are totally yummy and are great variations of a creamy chicken casserole.
This one is total comfort food. I know you're going to love this cheesy casserole!

Chicken and Spinach Pasta Bake
This Chicken and Spinach Pasta Bake is a creamy and cheesy pasta casserole made with chicken, fresh spinach, and tomatoes.

INGREDIENTS
10 ounces pasta
2 tablespoons butter
1/2 cup onion, finely chopped
3 cloves garlic, minced
4 ounces cream cheese
1 cup plain greek yogurt
1 cup whole milk
1/2 cup parmesan cheese, shredded
2 cups mozzarella cheese, shredded
1/2 teaspoon salt
1/2 teaspoon pepper
2 handfuls fresh spinach. roughly chopped
2 cups cooked chicken, cubed
1 tomato, diced
INSTRUCTIONS
1. Preheat your oven to 400 degrees. Grease a 3-quart or 9 x 13 glass baking dish.
2. Cook the pasta until al dente according to the package directions. Drain and dump the pasta back into the pot it was cooked in. Set aside.
3. Meanwhile, melt the butter in a saute pan over medium-high heat. Add the onions and garlic to the butter and cook for 3-4 minutes. Add the cream cheese to the pan and stir until melted.
4. Reduce the heat to low and stir in the greek yogurt, milk, parmesan cheese, 1 cup of the mozzarella cheese, salt and pepper. Cook until the cheese has completely melted, stirring frequently.
5. Add the spinach, chicken, tomatoes and cheese sauce to the pasta and toss until well mixed.
6. Pour the pasta mixture into the prepared casserole dish. Top with the remaining 1 cup of cheese. Bake in the preheated oven for 20-25 minutes.
NOTES
I used spaghetti that I broke in half before cooking. You can use any pasta you like though!
Feel free to change up the cheese to whatever kind you like. I once used sharp cheddar instead of the parmesan and it was delicious!

ReplyDeleteI am going to make this for a potluck on Sunday, so excited…but I’m not a super experienced cook so I have to ask, is it possible for me to make it on Saturday and take it to be heated up on Sunday? I would like it best hot, but can it be eaten cold?
