Let me tell you about my new addiction.  It's a little thing called Pinterest.  If you haven't heard of it, look it up.  It's one of the most addicting websites I've ever been on.

Pinterest is an online pinboard where people can pin anything that strikes their fancy.  You can scroll through all of the pins and repin all of the stuff you like.  I'm really not doing it any justice by trying to explain it.

Just know that I love it.  And you should check it out.  Because it rocks.

Anyway, that's where I found this recipe.  Baileys (love!), white chocolate (double love!) and fudge (do I really need to go on here?).   Seriously, they had me at Baileys, but Baileys fudge?  Come on.  I knew it had to be good.  And boy, was I right!  Sweet, rich, easy and delicious.  


Baileys, White Chocolate and Pistachio Fudge


Ingredients
  • 1 (14oz) can sweetened condensed milk
  • ½ cup Baileys Irish Cream
  • 36oz white chocolate chips
  • ½ cup raw pistachios, chopped

Instructions
  1. Line a 9x9 baking dish with nonstick foil.  Or, if you don't have nonstick foil, lightly grease.
  2. In a saucepan over low heat, combine the chocolate, condensed milk and Bailey's.  Stir constantly until the chocolate is completely melted.  Remove from the heat and stir in the pistachios.  
  3. Pour into the pan and let cool until set.  Once set, peel off the foil and cut into one inch squares.

  1. I also am a totally pinterest-addicted ... and those cute cubes look delicously great. Just, how long do these keep without getting bad? I am planning on presenting friends with those for christmas and would like to make them one week or so ahead.

    1. You should be good for right around a week. The worst that will happen is that they get a little dried out around the edges, but it doesn't deter from the taste. I hope you enjoy!

    1. It should be fine. Wrap it in plastic wrap then put it into an airtight container or freezer bag and freeze for up to 3 months. I would leave it in a block then cut it into squares after thawing in the fridge. If you're going to layer it, put wax paper between the layers. :)

    3. I wonder if you could use any of the flavored creamers? I love Baileys oh yeah baileys makes creamer so that may work.

    1. I hope that you and your friends enjoy it! Store it in in a container with a lid with wax paper between the layers and you should be good to go.

  6. Is the amount of chocolate chips correct? 36 oz seems an enormous amount of chocolate for a 9 X 9 pan.
